Caldo Verde with Crumbled Tempeh

Caldo verde is a Portuguese soup of potatoes and greens - I used rainbow chard. Isn't it pretty?

This version (from Appetite for Reduction) has tempeh crumbled in for protein, and was ready in no time. Really hearty, quick soup, perfect for a 95 degree summer day. Just kidding about the weather but it really was great and will be added to my regular rotation.
