Edamame Pesto Pasta

First things first! Here are some pictures of my family.

The red cabinet is where the cats sit to supervise my cooking. Tonight Papaya has taken the spot, but 90% of the time, it's Banana.


Banana was too wild to sit still, apparently. Ben had just picked up Papaya when Banana leapt from the counter onto his back.


Okay, and here's the dinner. A bag of frozen (thawed) edamame is blended with basil and lemon juice and garlic to make a low-fat pesto.


It looks kind of like mush. But it was good. It would be a great lasagna filling, along with tofu ricotta and some tomato sauce and veggies. I'm going to try that soon.
