Apple-Miso Tofu with Citrus Broccoli

Now, this picture is pretty crappy. I admit it.

The dinner, however, was the best thing I've tasted in quite some time. The tofu was marinated in miso, soy sauce, and garlic all day long, then baked with apples for an hour. The flavor was INCREDIBLE. Isa suggested (this is all from Appetite for Reduction) serving it with Orange-Scented Broccoli, but all I had was lime and lemon so I improvised. The whole thing was just outrageously good. Meals like this make me so grateful that I decided to try veganism, because I would never have thought to branch out into dishes like this otherwise.
