Chickpea-Quinoa Salad

In addition to the Indian feast, this weekend also involved quite a few Oreos and some Skittles and Chinese delivery. I thought a salad was in order for Monday night dinner.


This is just chickpeas, quinoa, red onion, some shredded carrot, and red leaf lettuce. I made a balsamic vinaigrette, made a touch creamy by the addition of dijon mustard and (can you guess??) cashews. Simple and delicious!
